The holidays have arrived and what better time to impress your guests than with creative new recipes to whip out at your next gathering! I’ve consulted the best of the best from the Loews Ventana Canyon Resort culinary team to bring you delicious flavors of the season that are easy and guaranteed ways to earn you an extra glass of eggnog. Whether you are the host/ess or a guest, our team has created three simple recipes sure to be the life of the party.

The Tucson Toddy

Ingredients (makes 1 serving):

For a garnish, top with a thinly sliced lemon and one dried chile (without too many seeds, for show). If the added spice is too much, you can always use the traditional cinnamon stick. We used a glass mug in our preparation, however, any mug would suffice. Comfortably add hot water to fill out the glass. Depending on the glass used, it could be anywhere from about 4 ounces to 7 ounces; so long as the glass/mug is a reasonable size, measuring isn’t really necessary.

 Cauliflower Tots

Cauliflower Tots

Ingredients:

Method:

  1. Preheat oven at 375F. Spray sheet pan with pan spray.
  2. In a processor, pulse steamed cauliflower until grated. Place grated cauliflower onto a clean towel and squeeze out excess moisture.
  3. Transfer to a large bowl and add egg, cheddar, parmesan, panko, chives, jalapeno, garlic, and season.
  4. Mix well and shape into tater tot sized shape with hands.
  5. Place onto sheet pan and bake for 15-20 min. or until golden brown.
  6. Serve warm with cheese sauce, or spicy ketchup sauce.

Eggnog Cheesecake Mousse w/ Gingersnap Streusel & Candied Cranberries

(serves 4-6)

Eggnog Cheesecake Mousse

Ingredients:

Method:

  1. Mix the cream cheese in mixer until completely smooth.
  2. Add powdered sugar and mix well.
  3. Whip cream, nutmeg, and rum with mascarpone and vanilla until soft peak.
  4. Fold into cream cheese mixture.
Gingersnap Streusel

Ingredients:

Method:

  1. Cream butter and sugars.
  2. Add eggs and molasses.
  3. Sift dry ingredients and add.
  4. Scatter on pan, sprinkle with sugar and bake.
  5. Grind into crumbs when cool.
Candied Cranberries

Ingredients:

Method:

  1. Bring sugar, water, and cinnamon stick to a boil.
  2. Reduce heat to a simmer and add cranberries.
  3. Cover with parchment and cook over low heat until cranberries are translucent.

Assembly

  1. Fit a piping bag with a round tip and fill with mousse.
  2. Place a layer of streusel in the bottom of a straight sided juice cup.
  3. Pipe a layer of mousse over the streusel.
  4. Add another layer of streusel, and pipe another layer of mousse.
  5. Top with candied cranberries and cranberry syrup.
